Aceves’ inspiration to start his own restaurant came from friends who had opened successful restaurants in the area, and the idea of owning his own place seemed like a natural next step. “I’ve always wanted to share my passion for good, real Mexican food with the community,” Aceves explains. “When I saw the kitchen at this location already had all the equipment I needed, I couldn’t pass up the opportunity.”

Catering Business Grows
The Burrito Lab isn’t just a popular spot for walk-in customers; their catering business has also been picking up steam. Aceves has been providing his homemade dishes for local events, bringing fresh and flavorful options to parties, offices, and gatherings throughout Champaign. “Our catering has really taken off,” he says. “It’s been a great way to share our food with even more people, and it’s something we’re going to keep growing.”

Health Department Approval
As part of opening his dream restaurant, Aceves was determined to meet every health and safety requirement. “We passed the health department inspection with flying colors,” he says proudly. “It’s been a lot of blood, sweat, and tears to get this place open, but we’ve worked hard to make sure everything is perfect.”

With his own recipes and the help of a dedicated team, Aceves has created a space where people can come for authentic, fresh meals that reflect his love of food and passion for the community. “Every day, I get to do something I love,” he says. “This restaurant is my heart and soul, and I’m so happy to share it with everyone who walks through our doors.”
